I had been meaning to try some of the lovely looking Little Green Spoon recipes for ages but hadn’t quite got around to it.
Ais, one of my lovely friends who’s thinking about doing a Whole30 next month, wanted to check this Paleo thing out so I said I’d make her a slap-up Wednesday meal. + I really need to get back into the swing of making tastier dinners – I’m falling into the boring as hell Paleo trap at the moment so it was a good opportunity to get back into it.
Main: Honey Glazed Salmon with garlic sauteed sweetheart cabbage (Daniel Breen, The Paleo Diet Cookbook) and spicy sweet potato fries (own recipe below)

Conclusion: The main went down well – delicious and light but still super tasty. Ais couldn’t believe that it was all sugar, dairy and gluten free. Always good when it feels like there’s no compromise! Dessert just didn’t quite hit the mark…. Texture a little off, which is to be expected with chia instead of rice in a pudding, and the agave wasn’t as deliciously sweet as real sugar. A bit of cinnamon and Organic hazelnuts helped add a bitta’ zing though and I’d definitely add some strawberries into that mix next time around.

Breakthrough day – and it only took my entire life
I had my first breakthrough day in gym last night. My first breakthrough day ever. And I’ve never felt stronger. It was the first time I really saw a marked improvement in my strength and stamina. With a 5am start yesterday I was knackered when I got to the gym and 8, convinced it was going to be a shit session but it was amazing.
Decreasing break time between reps, weight pumping was easier (not easy!) + added 10 minutes to my cool down run. As you can imagine I’m feeling pretty impressed with myself and to be honest, it’s exactly what I needed. Heading away on holidays in 2 weeks and I promised that I’d hit the gym every second day in the run up to make sure I’m feeling strong and happy heading into bikini territory.
Will I look ripped and toned? No.
Will I get there? Yes. I know that now.
The trick will be knowing the difference between a pound that I’ve put on because of a cheat day versus a pound I’ve put on because I’m actually toning up and building muscle. And I need to make sure I’m not eating less just because I’m seeing that happen. Good clean food, Paleo food, is not going to increase my weight, but give me the energy to train harder and keep my body working as it should.
Every diet I’ve ever done (weight watchers, juicing, Atkins… starvation!) has ended in disaster because that’s just what it was, a diet. The great thing about Paleo is that it IS NOT A DIET and hell am I sick of people calling it that.
It’s energy for work, nutrients for your mood, food for higher metabolism and anti-fat storage. It’s a lifestyle, it’s science, it’s fuel for life. Call me a friggin’ convert.
